Berry-Chocolate Tart

Berry-Chocolate Tart
  • Cooking spray
  • 1 (18 oz. package refrigerated reduced-fat chocolate chip cookie dough
  • 1 1/4 c. vanilla low-fat yogurt
  • 1/2 c tub light cream cheese, softened
  • 1 T. powdered sugar
  • 1/2 c. seedless raspberry jam
  • 1 c. blueberries
  • 1 c. raspberries
  • 1/3 c. semisweet chocolate chips
  1. Preheat oven to 350
  2. Coat bottom of a 13 x 9 inch baking pan with cooking spray. Press dough into bottom of prepared pan using lightly floured hands. Bake at 350 for 12 minutes or until lightly browned. Let cool on a wire rack.
  3. Spoon yogurt onto several layers of heavy-duty paper towels, and spread to 1/2 thickness. Cover with additional paper towels, and let stand 5 minutes. Scrape into a medium bowl using a rubber spatula. Add cream cheese and powdered sugar to yogurt;beat at medium speed of a mixer until smooth. Spread yogurt mixture over crust, leaving a 1/4 inch margin around edges; set aside.
  4. Place raspberry jam in a small microwave-safe bowl; microwave at HIGH 30 seconds or until jam melts, stirring once. Let cool slightly; drizzle over yogurt mixture, and sprinkle with berries. Set aside.
  5. Place chips in a heavy-duty zip-top plastic bag (do not seal bag), and microwave at HIGH 1 minute or until chips are soft. Seal bag; knead bag until chips are melted and smooth. Sip a tiny hole in bottom corner of bag, and drizzle chocolate over berries. Cover and refrigerate 2 hours.

Alligator Reef

“1652 hrs Monday November 29, 2004

Hi Everyone,

I just returned from Mr. Lahteine’s funeral and thought I would put a picture to the rumors about our new boat. We purchased a 1989 fiberglass Grand Banks in September located in Newport, RI. The boat is a single engine 32 ft sedan model. At the present time the boat is in Fairhaven, MA at D.N.Kelley Shipyard. The diesel engine is being replace and then the boat will go to inside storage for the winter. We named the boat ALLIGATOR REEF after a lighthouse on the Florida Keys. All the boats we owned while Kate and Larry E. were growing up were named after Florida Key lighthouses. We first had TORTUGAS, then SAND KEY, and last AMERICAN SHOAL. The grandchildren have nicknamed this boat GATOR, because they can say that name. We are looking for a friendly Alligator to use as a mascot picture. We expect the boat to be docked in Newport near the pilot boats. Several pictures are attached.”

Mullin Family Update

Kathy writes:

“O.K., Here goes. I am waiting for Walter to pick up Owen at the airport. He hasn’t been home since the end of August and we are looking forward to spending some time together. Lilly and Gary will be here on Saturday. We’ll all be together for a total of 24 hours.

While waiting, I am doing two things. First, Linda Mullin’s mother, Rose, makes the most awesome molasses cookies. She gave me the recipe last summer. You know, the kind of recipe verbally passed on. It takes a handful of raisins, maybe four cups of flour, a pinch of this and that. Since taking down the ingredients, I have made them three times and each time they come out differently. Although they taste good–Grandpa ate almost a whole batch– this is a challenge!! I may have to take a trip up to her house in the hills of the Berkshires and watch her make them.

Also, I am reading a great book. It is named The Devil in the White City. It is by Erik Larson who also wrote Isaac’s Storm. This book is about the development of the Chicago Exposition in 1892. Isaac’s Storm is about the 1900 flood in Galveston, Texas in which 6,000 people died in 24 hours. Both are great books.

Conversational English in VA

Rita writes:

[Don] and I have started teaching conversational English once again at church. It is really fun because the people are so nice. I have a beginner class and they really can’t communicate at all. I am so aware now of people who can’t speak English when I am out. Another fun thing is—when we are leaving church, the Spanish ministry are practicing their music and they are wild. I love going in and listening to them!!

Update on Grace and the Verwys’

“Today is Grace’s 6 month birthday! Here is a photo that we took of her today. She eats a little bit of carrots, pears, squash, bananas, and Cool Whip (if she is lucky). She is starting to crawl around and loves her exersaucer. The doctor said that she is off the charts for height at 29 1/2 inches.

Besides Grace news, we have also moved. It is a great house with a new kitchen and big backyard. Grace and I can walk to Starbucks, the grocery store, the library, and the community center. Here is our new contact information:

Gift List Registry Set Up

At the request of several people, and after some discussion about what the best way to do this is, I have set up a wiki so that people can put down gift ideas for Christmas.

If you aren’t familiar with what a wiki is, here is a short description (taken from this web page):

What is Wiki?:

Wiki is a piece of server software that allows users to freely create and edit Web page content using any Web browser. Wiki supports hyperlinks and has a simple text syntax for creating new pages and crosslinks between internal pages on the fly.

Wiki is unusual among group communication mechanisms in that it allows the organization of contributions to be edited in addition to the content itself.

Like many simple concepts, “open editing” has some profound and subtle effects on Wiki usage. Allowing everyday users to create and edit any page in a Web site is exciting in that it encourages democratic use of the Web and promotes content composition by nontechnical users.

So what we have is a web page that you can edit to add your Christmas List gift requests. More importantly though, you can also add suggestions for other people in your family.
